From a very young age, Franck Amsellem has been a true cooking enthusiast. This fascination led him to follow his culinary vocation and pursue studies at a hotel school in Paris.

During his years of apprenticeship at the hotel school, Franck demonstrated an exceptional talent for cooking and an unwavering determination to perfect his skills. Upon graduation, he took advantage of being in Paris to explore the city and its restaurants. He had a unique opportunity : to work alongside the legendary chef Alain Ducasse at the Plaza Athénée. This experience was decisive for his career, as he learned not only the finest techniques of French cuisine, but also the importance of creativity and innovation in gastronomy. But that's not all, he also joined the kitchens of Joël Robuchon for a year to see local and traditional cooking techniques.

After accumulating valuable experience working with two of the world's top chefs, Franck Amsellem finally decided to pursue his dream of owning his own kosher restaurant in Paris. Inspired by the teachings of Alain Ducasse and Joël Robuchon, Franck has created a culinary concept that marries French culinary traditions with bold contemporary touches while respecting the rules of kashrut. "I'm happy because I managed to adapt kosher recipes that I idealized when I saw them in taref."


Chez Franck is under the supervision of Beth Din de Paris and all ingredients are fresh and seasonal. Here, you can eat good French and kosher cuisine, something you rarely find in kosher. The dishes offered are modern and all perfectly made by Franck Amsellem. As he says himself, it is a real “pure bistro”.

Located in the 17th arrondissement of Paris, the restaurant continues to attract many people from the community looking to experience its unique take on contemporary French cuisine. With his tireless passion for the culinary arts and his commitment to innovation, Franck Amsellem remains an inspiring example for budding young chefs who aspire to leave their mark on the kosher gastronomic scene.
